Yay for March 1st! In a little more than 3 weeks I will be a mom of 2. Ahhh…let me just be totally honest here…it kind of freaks me out! It’s weird cause I wasn’t freaked out with my first one at all, but now Cole is almost a totally self sufficient 4 (almost 5) year old and not to mention that he has set the standard pretty high in the being a great kid category. I just feel like I’ve had it pretty easy, that there’s no way I can get that lucky twice! Guess we’ll have to wait and see.
Pretty uneventful week so far. I’ve volunteered at the hospital twice to make up for the weeks I was gone so my Monday and Wednesday were pretty similar days.
Pre-workout: eggo w/peanut butter (hadn’t gotten to the store so no bananas)
Spin class…it was a little harder to breathe coming back from below sea level to 6,000 feet, but I made it through.
Breakfast: Protein Pancake (luckily I still had ingredients to make my pancakes)
Since we had no food, Cole had no lunch, so I had to run by Kneader’s and grab him some soup and drop it off at school. Then I came home and got ready to go volunteer. Stopped by Great Harvest on the way for my lunch…are you surprised?
Lunch: 1/2 veggie sandwich
I was introduced to a fabulous find at the hospital…they have a delicious green smoothie!!! And since my dad took my magic bullet to St. George, I had no blender to make my smoothies. It was so good. The chef gave me the recipe, it’s a little too involved for me to make on a regular basis, but could become a regular…slightly adjusted.
The recipe says it serves 4. This is the recipe as it was printed, I will have to get clarification cause the parts with the * don’t make sense to me, I’m not sure if it means just 1 or 1 per serving or what. To be determined…
1 each green apple with peel on*
2 cups fresh kale
1 each banana*
4 TBSP fresh mint leaves
1 tsp rosemary sprigs
1 TBSP flax oil
4 TBSP aloe vera juice
2 cups water
2 cups ice
1 tsp stevia sweetner
Blend well…you can also add protein powder if you want to make it a protein smoothie
Picked up Cole from school and did a couple errands post office, dry cleaners, etc. Then came home and heated up some Chicken Tzatziki leftovers from Sunday.
I had planned to go to a 8:30 spin class, but woke up feeling like I had been hit by a truck. So it was kind of a lazy day.
Breakfast: Protein Pancake
Took Cole to play at the rec center and then Mommy really wanted some soup from Kneader’s so we went there for lunch.
Lunch: chicken noodle soup, a piece of Cole’s bread cause I wasn’t digging mine, and a serving of parmesan chips
Came home and Cole told me to lay down on the couch and watch TV, but not close my eyes while he played with his toys. I tried my best, but I’m pretty sure my eyes closed a couple times. Then we headed to swimming.
I grabbed an apple for a snack on the way to swimming and then Cole and I shared a Balance Bar on the way to taekwondo. Today was Tuesdays with Heidi. We made BBQ chicken pita pizzas…recipe to follow in another post.
Snacked on these while we were making dinner.
Just like Monday
Spin class…I had to leave a few minutes early so I could take a shower at the gym and get to my dr.’s appointment in 15 minutes. I put my stuff in a locker and closed it without putting a code in thinking it would just stay closed and not lock. When I got out of the shower and tried opening it in just my towel I found that if you close it…it locks!! Luckily it apparently happens all the time so they just sent someone up to break into it for me. A little embarrassing standing in my towel barely covering my pregnant self in the women’s locker room, BUT I did make it to my dr appointment on time.
Got home and needed a protein pancake but remembered I didn’t have any more cottage cheese. So I decided to try my mom’s Dukan (or as I like to call it, the Do Can’t Do It For Long) Diet pancake. The ingredients are similar, I doubled the recipe so I used 4TBSP’s oat bran, 4 TBSP’s greek yogurt, and 2 egg whites. It wasn’t better than my protein pancake, but it filled the void for the day!
You don’t need a blender for this recipe!
Off to the hospital for more volunteering.
Snack: apple and granola
Snack after volunteering: another delicious apple and kale smoothie, oh right and 1/3 of a chocolate croissant (and I don’t even like chocolate croissants!)
Sherilynn had friends in town from North Carolina that invited Cole and I over for dinner. They made short ribs with potatoes and carrots and bread. It was super yummy!

Then Cole learned the best way to finish his milk!
Time for a trip to VEGAS!!!!! But first, I must get my buns and guns class in.

After a little drama and many texts back and forth as to how to solve the drama…Heidi, Rebecca and I hit the road to Vegas. (Heidi won’t let me take any pictures of her, so I couldn’t photo document our fun drive!)

Snack: a couple of Sherilynn’s cookies she sent with us.
We made it to St. George just as I was getting super hungry and stopped for dinner at our favorite…Cafe Rio!
Dinner: Cafe Rio steak salad
Got into Vegas about 8 and after a few wrong turns and ending up on the other side of town…we finally made it to the Trump! We got to our room and were enjoying ourselves just hanging out and talking when an ear piercingly high pitched whistling noise started coming from the window. We called down to the front desk and they sent someone up with new room keys. Then Heidi decided we deserved an upgrade for our inconvenience and so she called the front desk manager and now we’re sitting in a one-bedroom suite! Love her! You could seriously fit King size bed in the master bathroom (there are 2). I’ll try to take more pictures tomorrow!
