Alfredo Chicken Spaghetti Squash

Lexy introduced me to the spaghetti squash alfredo while we were on Christmas vacation and it was so good! When I went to the store the other day I wanted to grab the ingredients to have on hand for lunches.

I experimented with adding protein…….

I cut up chicken breast into chunks and threw it in a hot skillet with a little olive oil.  I seasoned the chicken as it was cooking  with this McCormick Mediterranean seasoning real good and browned it until done.  I dished out 3 oz of chicken for my serving- 3pts+



I found this flavor alfredo sauce and had to try it! it is sooo good! Serving size is 1/4 cup – 2pts+



I threw in about 1/2 cup spaghetti squash and some fresh tomatoes on top and a sprinkle of dried sweet basil! – 0

**A yummy well rounded meal with veggies and protein for only 5pts+!



another version is to add spaghetti sauce to the chicken and serve over the spaghetti squash – YUMMY!!

    It’s been a long time since I baked spaghetti squash. Will it store in the fridge without getting mushy? Hubby doesn’t like it. I bought a large bag of the smaller portion chicken breasts from SAMS and would like to try this.

      I have noticed that it depends on how long I cook the spaghetti squash…. the shorter amount of time, approx 10 minutes, it will keep more crispy in the fridge… longer the time…. 12 – 14 minutes, it tends to get more mushy. I hope that helps???

    The spaghetti squash I had was almost 5 lbs. I pierced it well and cooked it in the microwave at 70% power and stopped it every 5 minutes to check its progress. It took 17 minutes to get that sucker done. I let it cool for over an hour and cut it in half, scooped out the seeds and then scraped out a large amount of squash. It had a good texture, sweet and nutty tasting, and was very good topped with the shredded chicken from another one of your recipes plus the Alfredo sauce from above. I froze the leftover squash in individual size containers and I hope it’s not mushy when I use it.

    That’s awesome Juanita! I’m glad you liked it. When I freeze it I usually freeze it with a serving of turkey chili. If for some reason it doesn’t freeze well by itself just know it does freeze well with chili or even the shredded chicken. Then you just pull it out of the freezer and pop it in the microwave when you want a quick and easy meal. 😉

      Lexi, I had actually looked at that video and followed her instructions EXCEPT I cooked it at 70% power because I read of spaghetti squashes exploding in the microwave. This one cooked well but because it was so large, it took 17 minutes. HEB didn’t have any small ones. I’m making Rick spaghetti sauce tonight so I’ll thaw a container of the squash for me and let you know if it’s yummy or mushy.
