Lexy introduced me to the spaghetti squash alfredo while we were on Christmas vacation and it was so good! When I went to the store the other day I wanted to grab the ingredients to have on hand for lunches.
I experimented with adding protein…….
I cut up chicken breast into chunks and threw it in a hot skillet with a little olive oil. I seasoned the chicken as it was cooking with this McCormick Mediterranean seasoning real good and browned it until done. I dished out 3 oz of chicken for my serving- 3pts+
I found this flavor alfredo sauce and had to try it! it is sooo good! Serving size is 1/4 cup – 2pts+
I threw in about 1/2 cup spaghetti squash and some fresh tomatoes on top and a sprinkle of dried sweet basil! – 0
**A yummy well rounded meal with veggies and protein for only 5pts+!
another version is to add spaghetti sauce to the chicken and serve over the spaghetti squash – YUMMY!!
