There are lots of variations you can make to this recipe depending on your preferences. Here is my recipe:
1 7oz can of chicken
1 green onion
1/3 of an apple
1TBSP reduced fat mayo
salt to taste
squeeze of lemon (or lime)
Substitutions or additions: pecans or almonds for walnuts, add grapes, add craisins (I love it with craisins, it just adds more points), if you don’t like mayo you can use light sour cream, greek yogurt, or olive oil. Go crazy!
Drain juice from chicken and put in bowl. Add the mayo, stir. Mince green onions and add. Cut apple into tiny pieces and add. Break walnuts into small pieces and add. Squeeze lemon or lime and add salt and stir.
Add to bread for a sandwich, tortilla for a wrap, or eat with crackers/pita chips and enjoy.
