Hey all…I really needed to do a quick video because I feel like sometimes on health and fitness blogs it’s all…”yay we are so awesome and healthy and fit…yay for us”. But if you’ve read our blog you know we aren’t like that. I mean don’t get me wrong, we’ve all worked our butts off, accomplished goals, discovered healthy recipes, found new workouts we love, but it’s not always roses in our Fire Lites Fire lives! I know I just posted my exciting results of my first 90-day challenge and being 3 pounds away from my Weight Watchers goal, but it hasn’t been easy, and especially lately, I’ve been struggling. But the one thing I know is that this is a normal part of the process and being healthy is a LIFE LONG process. So here you go…
Wow 90 days went by fast!! I can’t believe I almost have a 6-month-old. I just wanted to do a quick update on the end of my first challenge. So on 3/25/12 I weighed in at 202, I would like to say the largest I’ve ever been, but I weighed more when I was pregnant with Cole. On Monday June 18th at 174 pounds I started my Body by Vi 90-day challenge. At first I wasn’t really into drinking 2 shakes per day. I love food and didn’t want to drink my meals. So I incorporated them into my Weight Watchers point plus plan and mostly had the shake after my workouts. I loved all the different recipes you could make, but mostly just made a Green Greek Vi Smoothie which consisted of:
1/2C water, 2C spinach, 1C frozen fruit, 1/2C greek yogurt, 2 scoops of Vi-Shape mix.
At the halfway mark I had lost 12 pounds down to 162. So I thought hey if it’s working with 1 shake per day, I wonder how awesome it would be with 2 shakes a day. So I started having 2 (1 usually as my post workout and 1 either mid afternoon or in the evening). That was until I learned how to make the delicious Vi pancake!! Now I eat a pancake after my workout and have my Green Greek Vi shake in the afternoon. At the 90-day mark I was down another 9 for a total loss of 21 pounds on the challenge and 49 pounds total.
I can’t even believe it myself. I feel so awesome and love/hate the fact that none of my clothes fit.
I still have 3 pounds to go until I reach my Weight Watchers goal and 13 to my ultimate goal. It’s a process and I know it’s not going to happen overnight. I love my shakes, I love changing up my workouts, and I love finally feeling like my hard work has paid off!
Just want to do a quick check-in. As you read from Lexy and Carman’s posts we’ve all agreed to get better at checking in to help us all be accountable!
Here’s a few picture highlights: recording my workouts, new toys for Cruz, finding tarantula’s on my porch, Cruz starts rice cereal, 4 pounds from my goal ahhh!!!, the most delicious homemade Korean food from my sweet Korean neighbor, Cole’s starts taekwonsoccer???, love chill in with my boys, and going on a date to the movies with Cole!
I’ve been fighting a sinus infection for the last 2 weeks and it is seriously kicking my butt. After one round of antibiotics and me telling myself I was getting better for a week, I finally went to a doctor and she put me on a 20-day antibiotic. Oh joy! I feel like the sinus infection has really affected my daily schedule and ability to get stuff done. Cruz is going through a growth period and his sleeping schedule has been a little crazy. So sickness, plus lack of sleep, plus being a single mom, plus school, plus soccer, plus my house being a pain in the A to constantly keep clean, blah blah blah, do you feel me? 23 DAYS!!! AHHHH! Cannot wait to sleep for an entire day, like door closed mommy is in bed for the day, do not disturb unless to bring me starburst jelly beans and ice cream!
The one good thing about being sick is I haven’t been that hungry. So I’ve been consistent with sticking to my paleo diet during the week. I have been giving myself cheat meals which usually turn into cheat days or sometimes cheat weekends However, I’ve still been able to continue on my losing path. Since being paleo, I’ve lost 3.7lbs, which honestly I don’t feel is a huge difference from my losses with WW, but whatever, it’s a challenge, it’s temporary, this will not be a lifestyle change!
As for workouts, I tried out a gym here in Austin and honestly didn’t love it. I felt like the classes didn’t really challenge me. I wasn’t comfortable with the childcare for Cruz and the membership is super expensive. So I’ve gone back to what has worked for me…another round of P90X2!! I finished my first 90 days and had a total loss of 21 pounds. Pretty freaking awesome!!
That’s about all for me. Just taking it day by day. Thought this was pretty funny and totally true for me!!!
Yeah yeah…it’s Wednesday, are you surprised? After making it through the first week of school successfully, my sinus’ decided to rebel so 7 days, 1 z-pack (antibiotics), 1 bottle of robitussin, 1 box of Mucinex, and almost an entire bottle of headache medicine later, I’m still fighting it. Good Times!!
I got the idea to make these from Danielle. We were talking about prepping food for the week and she said she makes turkey meatballs cause they’re easy to just grab and eat whenever. She usually makes hers with onions and peppers but I had some cilantro that needed to be used so I did some googling. Came across this recipe from my favorite SkinnyTaste.com and really just adapted it to be paleo friendly. She also makes a dipping sauce with hers that looks ridiculously good!!
1-1 1/4 pounds of 99% lean ground turkey
2 cloves of garlic
1/4 cup chopped cilantro
1 tsp cumin
salt and pepper
1 tsp olive oil
1/4C ground flaxseed, you can also use breadcrumbs but this Paleo girl cannot at the moment!
Heat oven to 400. Chop cilantro and scallions (could use food chopper or processor and add the garlic as well, or use a garlic press). Add all ingredients to a big mixing bowl and mix together with your hand. Yes, your hand, get in there!!
Spray baking pan with cooking spray. Use a 1/4C measuring cup to scoop out mixture and form into balls.
My recipe made 15. You can make them smaller or bigger! Bake for 10-12 minutes, try not to overcook them or they will be super dry. The skinny taste recipe tells you to cook them for 15 min and I’m not sure if it’s my oven or if the balls were too small, but some of them turned out super dry. The bigger ones turned out delicious!! You can eat these plain, with a dipping sauce, or we put them in organic tomato sauce and ate it over spaghetti (squash for me).
I thought I’d do a quick update on how the Paleo diet is going. I’ll admit…I’m hungry and a little tired, but feeling better every day I continue to stay strong! I’m trying to get into a routine so that I don’t sit around wondering what I should eat. In the mornings I have a greek Vi shake within an hour of waking up and before my workouts. Today after my spin class I made a delicious Vi shape pancake soooooo good. I posted the recipe HERE. I cook up extra food at dinner to have as lunch or snacks throughout the day and also bought a bunch of Larabar’s for a quick grab and go. So far so good. One week down, five more to go! Looking forward to my cheat meal!!!
