BBQ Chicken Quesadilla

Just happened to catch THIS VIDEO POST from Roni tonight….
I had just come home from the gym and I had 30 minutes before I was picking my son up from a birthday party.  I had left over rotisserie chicken meat, green bell peppers, low fat cheese, fresh spinach, and low carb tortillas….  yay!!!
…at the last minute I realized I could take pics and share with you…
preheated skillet on medium heat… sprayed with pam and added a tortilla…
layered 1/8 cup of low fat cheese, shredded chicken, and green peppers… followed by spinach, 1 T bbq sauce and another 1/8 cup low fat cheese… and placed second tortilla on top…
*this is a RONI TIP from a while ago….  place a pot with water in it on top of the quesadilla while it’s cooking to squash it all together*
then flip and repeat…
 these are my 1 pt/each tortillas i found…
and dinner was ready!  it was sooooo good!!  there are so many variations you could try!
this one was approximately 6 pts plus!
