experiemented and threw together a recipe for Chicken Stuffed Poblano Pepper– cause I’ve been craving a dish with poblano peppers forever! 
I used RR’s recipe above as a idea but made it a wayyy healthier version. 
It was super yummy– but I’d like to tweak the flavors alittle.
