Lunch & baking with my girls

Weight Watchers Meeting- We talked about making space for success in your kitchen

Ate lunch at school with my girls

Had a Subway sandwich- oven roasted chicken breast with honey mustard and all the veggies except jalepenos and olives.  9pts+

Also tried these Apple Snapz that was mentioned in our WW meeting earlier. They were really good!!!!  Its awesome that they are only 1pts+ per bag!

Dinner: Baked Rotini casserole & salad

I threw together this casserole for something different than spaghetti……browned ground turkey and added spaghetti sauce, cooked rotini noodles (thanks Cyndi!! 😉 ) till al dente and then threw it all in a casserole dish with mozeralla cheese and baked for about 30 minutes or so.

My salad was just 50/50 mix lettuce (my fav right now!), almond accents, and Pioneer Woman’s marinade/dressing from her marinated tomato salad recipe. Sooooo good!! My new fav dressing!

My little baker and I did an experiment– we made mini cinnamon rolls out of crescent roll dough.

we didn’t glaze them– we just ate them like they were.

They were soo cute and fun and of course sooo good!!!

Reminds me of the Cinnamon Twirls that my mom always used to buy. YUM!

36 year old military wife of 18 years and stay at home mom to 4 incredible kids (3 girls ages 17, 11, 11 and our son is 6). Cyndi, Lexy and I created this blog to be accountability partners and that has been a huge key to this journey! I love to cook and I love converting my favorite recipes into a healthier version for my family to enjoy! I love the after effects of exercising :) I love challenging myself to fitness goals to change things up and in doing so I have run numerous 5K/10K's, several half marathons, one full 26.2 marathon, and a Tough Mudder. I love circuit training, weight training, and running sprints. My goal is to inspire others to take their health seriously, and to show how small changes can lead to big results.
