I originally saw this idea on a Hungry Girl recipe for a pizza egg mug. She has lots of recipes and variations for making eggs in the microwave. I still like to make them the old fashioned way on the stove… You will need:
• 1/2 cup of Egg Beaters
• 6 slices of turkey pepperoni, diced
• 2 T diced tomatoes (or 1 cup of roasted veggies)
• 1 wedge of Laughing Cow Cheese, Light Creamy Swiss
• 1/8 tsp italian seasonings
• 1/2 tsp parmesan cheese
Scramble the Egg Beaters to desired consistency…
Add in tomatoes, roasted veggies, italian seasonings, and mix together…
Add in cubed Laughing Cow Cheese wedge… mix together until melted through…
Top with parmesan cheese and ENJOY! This is such a filling and nutritious breakfast!! I may never eat plain eggs again!!
We’ve had several people ask about the protein waffle lately. We are currently working on a way to make our recipes easier to find, but in the mean time I figured it wouldn’t hurt to update on how I make the protein waffle. I originally found the Protein Pancake from this guest post on Peanut Butter Fingers. The first time I tried it, I fell in love! The reason I love it so much is that it is such a fun, quick and easy breakfast. You can change the flavor easily based on which fruit you add to the top! I have been eating these pancakes or waffles for many months and have yet to get bored. They are made with 3 main ingredients…. Oatmeal, Cottage Cheese, and Eggs! (Many people ask if you can taste the cottage cheese…. and the answer is no. I can’t stand cottage cheese normally, and I swear you can’t taste it!) Thanks to the magic bullet blender, it takes only a few seconds to blend the batter and a few minutes later breakfast is ready. I prefer the waffle version because they seem to cook better/faster… The link to the protein pancake version is HERE.
1/3 cup dry oatmeal
1/3 cup fat free cottage cheese
1/3 cup egg whites OR egg beaters
1/2 teaspoon baking powder
1/2 teaspoon vanilla
1 T cinnamon
This process has become very routine for me, so I’ll tell you exactly what I do…
I use the 1/3 cup as a scooper and scoop out the dry oatmeal to add to the blender. Second, I use the same scoop and add the cottage cheese. Third, I pour in the egg beaters to the same scoop and add to the mix. I have a half teaspoon for the baking powder. I then add a half teaspoon of vanilla and I add the cinnamon last. (Usually about a table spoon, but I don’t measure it… ) Blend it all up…
This is the approximate amount of batter that I use for each waffle… It makes 2!
Then I top it with whatever fresh fruit I have on hand… Today, I didn’t have fresh fruit, so I thawed out some strawberries and raspberries from the freezer. I also add approx 1/8 cup of sugar free syrup. You can substitute the syrup for fat free cool whip.

This is a very simple smoothie recipe. I have one almost everyday. It’s great for a healthy snack!
I use 1 cup of diet V8 Splash… my 2 favorite flavors are Berry Blend and Tropical Blend. I add 2 scoops of Standard Process Whey Pro Complete. Then I’ll add 1 cup of mixed frozen fruit.

The Supplies: small skillet, prepared pico (i just pick this up in the produce section, but feel free to make your own), Laughing Cow Chipotle Cheese wedge, and 2 eggs.
Begin by scrambling eggs like normal…. I keep my heat on med-high, so they don’t cook too fast.
As it’s cooking…. dump in desired pico 😉
Add in the cheese wedge…
Add additional pico and pepper to taste! This is soooo good! And only 5 pts plus!!!
