Sweet and Spicy Crockpot Chicken

So this recipe was completely random and actually turned out to be pretty good.  My son Cole loved it way more than I did and has eaten it as leftovers for the past 2 nights!!  The measurements are an approximation cause I didn’t really measure 😉  If I make it again, I will probably experiment with the ratios and add less teriyaki sauce and more pepper jelly and maybe some chili sauce.  Oh the possibilities!

Ingredients:

2 frozen or thawed chicken breasts

1 C teriyaki sauce

1/4 C pepper jelly

3-4 cloves of garlic

Put everything in the crockpot.  Cook on low for 4-6 hours.  30 minutes prior to serving take out and shred chicken then place back in crock pot.  Makes about 3 cups.  Serve warm over rice or with veggies.  I also put it in a salad cold the next day for a delicious chicken salad!

Serving size 1/2C = 3PP.

Low key weekend

Pretty low key weekend around here.

Saturday:

Breakfast: protein pancake…didn’t have any cottage cheese so I used greek yogurt instead, not my favorite, it worked, but didn’t taste as good.  5pts

Aunt Sasa came over and  we couldn’t figure out what to do.  It was a beautiful day, but Cole was super tired and crabby and I wasn’t really in the mood to do much.  We decided we would just go grab some lunch.  Cole wanted a hamburger, fries and shake so we ended up trying a burger place here in Park City called Flippin’ Burgers.  When we got there Cole changed his mind about the burger and fries and instead only wanted a shake.  Unfortunately for him, the shake was not that good.  Even he agreed and took maybe 2 sips of the whole thing.  He ended up sharing a turkey burger and fries with me.  It was delicious!  14pts

We rented some movies on the way home and Cole went straight to bed.  Sherilynn and I watched the movie Moneyball.  Very good movie!  Snacked on leftover cookies, a handful of Rice Chex, and 1 licorice…10pts.  Dinner was leftover Chicken Enchilada Veggie Soup and a piece of toast.  As you can see, after I gave Cole his bowl there was maybe 1/2C left for me, but I wasn’t starving so it worked out fine plus I made a green smoothie too…4pts

Snack while watching TV: 1/2 apple and a spoonful of peanut butter..2pts

Sunday:

Woke up seriously craving a bagel.  Actually, I’ve been craving a bagel for like 4 days, but gave into my craving today.

Breakfast: cinnamon raisin bagel half with cc and half with butter and jam and some oj…15pts

Snack at church: 2 fruity tootsie rolls, 1/2 balance bar…3pts

Didn’t really have lunch, I probably should have cause instead I just snacked on the following… some dried mangos, a green smoothie, 1 reese’s mini pb cup, a couple bites of Cole’s sugar cookie, and 2 twizzler’s pull n’ peel…11pts

Dinner: tried another recipe from the Skinny Taste website, Santa Fe Crockpot Chicken.  I pretty much followed the recipe (did not use corn), I cooked it on high for 3 hours cause we were starving, and then added diced veggies like I did to the Chicken Enchilada soup recipe.  Served it over rice.  It was soooo yummy and when you don’t use the corn it’s only 4 points for 1 cup serving.  I also added a dollop of greek yogurt to my bowl.  6pts

 And now I wish I had some more cookies, but it’s probably good that I don’t!

Sweet & Spicy Meatballs Recipe

I’ve been in a rut and unmotivated for a while with trying to figure out new recipes to try and add to my monthly menu. Not sure what my problem has been but its my niche for this blog so I’m trying to get with it!!! {the perfectionist in me always gets in the way – I’m sure that’s a lot of it! ;)}  Thankfully, with the holidays here it definitely gets me more in the mood to cook, bake, and look for recipes that are a healthier alternative and taste awesome!

Today I came across Gina’s Skinny Italian Turkey Meatballs and have been wanting to make some meatballs for a while.  I made these meatballs according to her recipe in the link above – I doubled it because I had a 3 lb package of ground turkey and I used dried Italian seasoning since I didn’t have any fresh parsley.

Since I’ve actually been craving sweet & spicy meatballs that I usually serve as an appetizer during the holidays or over rice as a meal – I put a little twist on it and I made my own sweet & spicy sauce instead of making it an Italian dish and using the marinara in the recipe this time.

Ideally I would normally throw the cooked meatballs in the crockpot and then dump each of these jars in and let it cook and simmer for 4 hours. Since I didn’t plan ahead I had to improvise. So I combined these two jars in a saucepan and then just served it over the top. It tasted yummy and I liked it – but I think I like it better the crockpot way after the meatballs are more ‘marinated’ in the sauce.

You can use any frozen mixed veggies you like.

Serve it over rice or noodles.

Add water chestnuts.

The options are endless. 😉

Tuesdays with Heidi – Salsa Verde Crockpot Chicken

Chicken verde:  4-6 chicken breasts (depending on the size), 1 bottle of salsa verde we used Herdez brand, garlic (about 3-4 cloves)…throw it all in your crockpot and cook 4 hours if chicken isn’t frozen 6-8 if it is.  When chicken is cooked take out of pot, shred, then put back in the crockpot for another 30 minutes.

1/2C of chicken is about 3pts.

Serve with white corn tortillas and whatever you want to top it with cheese, avocado, salsa, lettuce, sour cream, the possibilities are endless.

5 ingredient taco soup

Cyndi’s 5 ingredient taco soup (lower carb version)
1 can 33oz petite diced tomatoes
1 can 15oz black beans (drained and washed)
1/2 yellow onion chopped (about 1/2C)
1 package of 93/7 ground turkey about 1.25 lb (browned)
1/2 packet of taco seasoning
Throw everything in a crockpot on high for 3-4 hours
Makes about 10 half cup servings: 4 points/half cup

My usual taco soup recipe has all of the above but also:
1 can kidney beans
1 ranch dip packet
optional…1 can corn

Top with cheese, avocado, sour cream, and eat with chips…don’t know the points for this version, but it’s definitely not 4!! 😉
