Greek Yogurt Pie

My mom made this delicious greek yogurt pie tonight for dinner so I just had to share!


  • non stick cooking spray
  • 1 package of graham crackers (about 9 full crackers)
  • 1 stick butter, softened
  • (2) 6 oz fat-free flavored Greek yogurts (we used Fage strawberry)
  • sliced fruit for the top of the pie (we used mangos and strawberry’s)

Spray pie pan with non-stick spray.

Put graham crackers in a plastic bag and use a rolling pin to crush into pieces.  Melt butter and mix together with graham cracker crumbs until evenly moistened.  Press evenly into bottom of sprayed pan.  Place in the fridge until cold about 15-30 minutes.

Stir together yogurt and cool whip and pour into cold pie crust.  Place cut fruit in a design on the top.  Put in fridge to set for about an hour so you can cut it.

Serves: 8

So yes, this greek yogurt pie recipe is a little high in points but it is soooo good!!

Ways to cut the points would be to use light butter, less butter, less graham crackers etc.  Caution when using less butter the crust will be very crumbly and won’t stay together. has a recipe for greek yogurt pie that uses 1 TBSP light butter and 1/2C crushed graham crackers for a crust, but I have not tried it.  That would take the serving  to 4 points+.

chocolate chip cookies

Cyndi’s WW modified chocolate chip cookies

I love me some chocolate chip cookies…here’s a recipe I used based off the WW oatmeal cookies we all love.

1 stick butter

3/4 C brown sugar

1/4 C white sugar

1 egg white

1/2 tsp salt, baking soda, vanilla

2 C flour

1/2 C chocolate chips

Melt butter halfway about 20 sec in microwave, stir in sugars, then egg white, then salt, soda, and vanilla.  Add in flour (make sure the dough isn’t too sticky, if it is add more flour) and chocolate chips. Preheat oven to 350degrees.  Use a tablespoon to form cookies out of the dough.  I usually fit 12 on a pan and can make 2 pans with this recipe.  Cook 9-11 minutes depending on how you like them, I like them a little chewy inside so I cook them just until they are light brown on top.

Makes 24 cookies…just make sure you don’t each too much dough 😉

Tortilla S’more

I was introduced to a new concept while on the camp out over the weekend….. Tortilla S’mores!!! They were so good. On the camp out, we wrapped them up in foil and they rested on warm coals until they were nice and gooey!

Chocolate is all I can think about the last few days… if you know what I mean about this time of the month… Here is a great way to get that fix while still sticking within my WW points allowance!

2 small carb balance tortillas (1 pt each, so you could just use one and fold in half)

1/4 cup of mini marshmallows (1 pt)

1 T mini chocolate chips (2 pts)


Spray the quesadilla maker with a little Pam…

Assemble the goods!!


5 points plus for this gooey goodness!

Banana Peanut Butter Soft Serve

Carman posted this on our new Fire Lites Fire Pinterest page the other day and I knew I wanted to try it soon!  I have made Frozen Banana Soft Serve before, but adding peanut butter and cocoa just sounds awesome!!!  Yesterday afternoon, I noticed I had some bananas that were going bad, so I sliced them up and put them in the freezer!  After my lunch today… I was ready for a frozen treat!

1 – Grab frozen bananas out of the freezer and put them in the food processor…

2 – Start the food processor and let it run for approximately 45 seconds…. be patient… it will look like this for a while.

3 – At some point… it magically turns into soft serve “banana” ice cream!!!

4 – I added 1 T of peanut butter and 1/2 t of cocoa… and let ‘er rip…

5 – You are left with Banana Peanut Butter Soft Serve!!  Yummy!!!!  And only 2 Points Plus!

Peanut Butter tip & Muscle Blast

pre workout–banana w/pb – 2pts+

I’m finding that eating a little peanut butter with my banana before my workouts vs. just a banana helps me a TON!  I’ve noticed it’s helped me maintain my energy throughout my workouts and keeps my blood sugar stable so that I don’t feel famished when I’m done with a hard workout.

Workout: Muscle Blast class with Carla at 24Hr –  +8pts

This chick is AWESOME!!!!! First off she has the lean body that I dream of achieving, and second she does the coolest/different exercises in this class to really target your core and smaller muscles in addition to the larger.  LOVE LOVE this class!

Post workout/breakfast – ISO vanilla protein-2 pts+  & oatmeal- 4pts+
