I saw this idea on Roni’s Green Lite Bites site and knew I would be trying it! So glad that I did because it is really really good!
Preheat the broiler!
Slice the butternut squash into 1/2 inch thick rounds… You’ll be happy to know that you can leave the skin right where it is… no peeling required!
Spray the cookie sheet with Pam and place under the broiler for approx 10 mins… I watched this like a hawk so they wouldn’t burn…
Flip them over and smear some pizza sauce, turkey pepperoni, dash of italian seasoning and a little mozzarella cheese…
Place under the broiler for 2 or 3 mins… watch closely!
Now dive in to your new “not-so-guilty” pleasure! Sooo good and so satisfying! Thanks Roni for the awesome idea!
I have never been a fan of cottage cheese until now! This is a very simple and fast snack…
I got this idea from my new trainer, Pilates Lisa! (Be sure to “like” her Facebook Page!)
Half cup of fat free cottage cheese…. cut tomatoes lengthwise and add to the bowl. She suggested slicing the tomatoes over the bowl so the juice from the tomatoes can mix into the cottage cheese….. sprinkle pepper to taste.
That’s it! Mix it all up and ENJOY!!! Seriously delicious!
Carman’s mom gave me lots of yellow squash from her garden!! Yummmm!!! I’ve been dying to try this veggie idea that I saw on Pinterest a while back, so this was the perfect opportunity!
Preheat oven to 375F
I used my handy dandy mandolin slicer to prepare the squash into thin little slices…
I sprayed the pan with PAM and layered the squash… spray the top with PAM & sprinkled a little kosher salt and some pepper…
I roasted them in the preheated oven for approximately 15 to 20 minutes! Be sure to watch them so they don’t burn!
So good!! And zero points plus!
One of Torry’s patients sent him home with zucchini fresh out of their garden!!! I was so happy when he walked in the door with them because I had been eyeing this idea for dinner from the Proud Italian Cook… I worked with what I had around the kitchen and it turned out really tasty!!
Preheat oven to 350F…
Start by cutting the zucchini in half lengthwise … they suggest trimming a little off of the bottom side so it’s sits in the pan better…
Using a spoon, hollow out the middle slightly by removing the seeds…
Spread 1 to 2 teaspoons of pizza sauce across the tops…
Layer turkey pepperoni, tomato, and Weight Watchers string cheese…. (these are the toppings I had on hand, there are numerous possibilities!)
***Duh, I left out some important details…. before adding the cheese, bake for 25 to 30 minutes. Then add the cheese and put under the broiler for about a minute until the cheese melts***
They were REALLY good!!! Another great way to get it some veggies! …. and only 2 Points Plus…
I have this awesome book from Weight Watchers called Fruit & Veggies A to Z. It contains 175 simple recipes to use with a variety of produce. The best part of the book is that it teaches you what to look for when purchasing produce… how to choose, how to store, and what’s “in season”. It comes in handy when I want to “live on the edge” and try something new. For this idea, I went with something really simple… Grapes.
The ingredients are pretty straight forward. The only thing on the list I had not previously purchased was tarragon… but with a little searching around the herb section of the grocery store… I stumbled upon the last container! Whew!!
You will need:
1/2 cup seedless grapes
1/4 cup cubed cooked turkey breast
1/4 cup diced celery
1 T plain fat-free greek yogurt
2 tsp fresh tarragon
1 light whole wheat hot dog bun
Toss all ingredients in medium bowl. <—- This is why I love this idea…. SIMPLE! 😉
I decided to use romaine lettuce instead of the hot dog bun to save points….. Heaven knows I’ve been getting enough points elsewhere! 😉
With hot dog bun – 5 points plus (no bun – 3 points plus)
