Protein Pancake (or Protein Waffle)

I found the Protein Pancake from this guest post on Peanut Butter Fingers.  I have tried these types of pancakes before but this one is BY FAR the best!  I love having it for breakfast and it’s a nice alternative to just eggs and oatmeal.  I have had several people ask me about it, so I wanted to show a visual of my step by step process.  From beginning to end…. this takes me less than 15 minutes… and I clean up my mess as I go along…  usually.
(When I first started WW… I just wanted someone to tell me what to eat.  I didn’t like cooking and I am not the kind of person that can just throw things together.  I think that’s why I like blogging so much… there are tons of ideas out there and I love finding new and fun ones that I feel like I am capable of making myself!)Set everything out, of course 😉

While getting things together… I have my small skillet preheating on medium heat…
third cup of fat free cottage cheese
third cup of egg beaters or egg whites
third cup of oatmeal
half teaspoon baking powder
half teaspoon of cinnamon, or more
Add all the ingredients to the blender
spray the pan  (or a waffle iron) with a little pam… then add pancake batter
(if using a waffle iron will have to split the batter in two)
i usually cover mine… approx 4 mins
while it’s cooking, prepare your favorite fruit topper

a quick check and flip if it’s ready

3 or 4 more minutes

    I LOVE these!! I have started adding abt a tsp of vanilla to mine now-gives it alittle extra flavor w/out adding any points. 😉 I have also started cooking mine into 2 pancakes instead of 1 big one and they seem to turn out better that way. You could add blueberries to the batter while it's cooking–so many variations where you could never get bored!

    Just tried these for the first time and YUMMO! And I think my 3 year old daughter likes them too…I had to change it up a little because I didn't have all the "correct" ingredients but all in all 2 thumbs up! :) Thanks!
