I originally saw this idea on a Hungry Girl recipe for a pizza egg mug. She has lots of recipes and variations for making eggs in the microwave. I still like to make them the old fashioned way on the stove… You will need:
• 1/2 cup of Egg Beaters
• 6 slices of turkey pepperoni, diced
• 2 T diced tomatoes (or 1 cup of roasted veggies)
• 1 wedge of Laughing Cow Cheese, Light Creamy Swiss
• 1/8 tsp italian seasonings
• 1/2 tsp parmesan cheese
Scramble the Egg Beaters to desired consistency…
Add in tomatoes, roasted veggies, italian seasonings, and mix together…
Add in cubed Laughing Cow Cheese wedge… mix together until melted through…
Top with parmesan cheese and ENJOY! This is such a filling and nutritious breakfast!! I may never eat plain eggs again!!
