Roasted Veggies!!

 

Gone are the days of steaming broccoli and cracking open a can of green beans…. that used to be the only way I got in my veggies. I have really fallen in love with roasted veggies. This is one of my favorite combinations because they are soooo tasty and colorful! I preheat the oven to 425F and spray the bottom of the roasting pan. You don’t have to use this exact amount or this exact combination of veggies, but this is what works for me. I try to make a big batch that I can use for several meals.

Yellow Squash, Zucchini, Red Peppers, and Purple Onion

Dice them all up!  I love using my Pampered Chef knife.

Mix them all together and spread evenly over the pan. Spray the tops of the veggies with Pam. Sprinkle pepper and kosher salt to taste.

Roast in the oven for approximately 25 to 30 minutes! That’s it!  Very simple and a great way to add some variety!

Just got home from 25 minutes on the elliptical followed by 20 minutes on the stair climber!  I really pushed myself today and glad to have that work out in the books!

Here are my Fire Bites from yesterday…. a rather snacky day…

Protein Pancake in the morning… -5pts  (My boys thought it was funny)

Then I went to an awesome Boot Camp class for an hour.  Drank a Muscle Milk Light while picking up some things at the grocery store. -4pts

Came home and had some half the fat ice cream… makes sense, right?  -3pts

Turkey Chili W/ Spinach & Pico -5pts

Zone Bar – 5pts

Egg Whites & Turkey Sausage – 4pts

Butternut Squash – 1pts (ended up adding ketchup)

Not pictured is a Smart Ones dessert for -4pts and some of my son’s fish sticks for -6pts.

    Lexy,I LOVED your list of meal idess. I need a go to list….and this inspired me to make one of my own.

    I was wondering what you girls do about family meals when trying to lose. I get overwhelmed when trying to plan my WW menu but also trying to incorporate family meal ideas. My husband is easy buy my teenage sons don’t want to eat a lot the things I would choose.

    Do you fix seperate things for your kids/spouse?

    I love this website!

      Hey :) – I will do a blog post about this, but in the mean time you may want to check out/google EMeals.com. They provide meal ideas, grocery lists, etc for budget friendly, points friendly family meals- they even list the points per serving! I’ll get back to you with more about this. :)
