Rummaging through my pantry, I came across this bottle of Creamy Alfredo… I ran the stats and realized that paired with a veggie, it wouldn’t be too high in points. It definitely had the “comfort food” feel to it. It was perfect because right around dinner time, we were in the middle of a thunder/lightning storm.
First, I prepared the spaghetti squash by gutting it and placing it upside down on a baking sheet. Placed it in the preheated oven (425F) for 40 minutes.
After it was ready, I placed the squash “noodles” into a container to use later in the week.
My dinner portion was 1 cup of spaghetti squash, 1/2 cup of alfredo sauce, and chopped tomatoes on top. So good!! -4pts
