Vi Shape Pancake

Sundays with Cyndi- Vi Shape Pancake

Yeah yeah I know…it’s Tuesday. Better late than never right? School started and Cole had his first day of Kindergarten. Tear. He’s such a big boy…so I’ve been a little preoccupied!

So usually I will make a dinner to post for my Sundays with Cyndi, but if I were to do that from this Sunday here would be the ingredients and instructions…

On Saturday night, go to Chipotle, get a burrito bowl, don’t eat it all, put in fridge, reheat Sunday.



Sooooo instead you get breakfast!

I’ve been playing around with different recipes trying to find a yummy Vi Shape pancake recipe that I can be addicted to. Some I’ve made are too thick, some too runny, etc. So if you don’t have the Vi Shape shake mix, you can try and substitute another protein powder, but I can’t guarantee that it will turn out the same…or you can just buy the shake mix and love life!! 😉


2 scoops Vi Shape shake mix

2 TBSP ground flaxseed (just bought a big bag at Costco, cause it’s Paleo friendly!)

1/4C unsweetened coconut almond milk

2 egg whites

Blend all ingredients in a blender and pour onto frying pan on med/high heat. Turn when edges look cooked (be careful to make sure the bottom is nice and brown otherwise you’re going to make a mess when you try and turn it). Serve with 1 TBSP peanut butter (my fav is Skippy all natural with honey) or whatever you want to put on it!!! SO easy, SO yummy!

How fast can I blog?  It’s 10:47 and my computer says I have 44min left of battery, ready go…

It’s been a pretty laid back week.

Friday: I can’t even remember what I did, that was like a week ago and my brain barely remembers what I did yesterday!  I do remember it was weigh-in day and I lost 2.2lbs.

Saturday: went to an art party at my sister’s house and bought my first pieces of artwork, I’m officially a grown-up now!

Sunday: church

Monday:  Felt really sluggish and tired.  Did my workout and snacked a lot.  Pretty sure I’m missing like 6 food pics, maybe on purpose??  😉

 Tuesday:  P90X2 Plyocide, hung out at the pool, dipped Cruz in, Happy July 3rd? BBQ

Wednesday: Happy 4th of July!!  60min hot yoga, went to Mirror Lake with the fam, had a picnic, kids swam in the freezing cold lake, came home and had delicious pizza and vegged out in front of the tv, it was a blast!

Thursday:  Raining finally!!  We needed it desperately cause the state was pretty much on fire.  Did my P90X2 shoulders and arms, went to lunch with Sasa to her favorite El Chubasco, then she dragged me to 90min of hot yoga and I seriously thought I was going to die by the end.  I experimented with my Body by Vi Vi-Shape mix and added it to our protein pancake.  It literally tasted like I was eating cake!  Even my sister Sherilynn who is like ANTI my Body by Vi shake mix, for some unknown reason, said “mmm that smells like cake” then tasted it “crap that is GOOD”…HA!!!  It did get a little dry, next time I may experiment with the recipe.  I’ll keep you posted.

Today: Rest day much needed, my body was screaming at me.  Also weigh-in day.  I wasn’t expecting a loss this week because I seriously had at least 20 cookies this week (weight watchers, but still!).  I was pleasantly surprised with a 1.8 pound loss.  My total weight-loss since 3/25 (the day Cruz was born) is 39.1 with 12.9 to go in order to reach my goal weight!!  I’ve lost 9.5 just in the time I’ve been switching out my post-workout shakes for my Body by Vi shakes, so I’m super excited to see how it continues over the next 60 days of my 90-day challenge.

As far as food today it was pretty standard…protein pancake, Vi-shake, snacked on some Trader Joe’s pretzels at the pool, 1/2 balance bar, and Chipotle take-out for dinner at a friends house.  Oh…and another cookie 😉 I’m obsessed!  But hey, I’m losing weight and eating cookies…what more could I ask for?????

Insight for the week: My yoga teacher Gwen at Tadasana Yoga in Park City gave us a great analogy about freedom.  If you think of a flag pole and the American flag, the symbol of our freedom, the pole is the stability that gives the flag the freedom to wave.  So think about that and put it in your own life.  We have the ability to give ourselves freedom.  The more stable we are in our lives, the more freedom we have.  So many things can interrupt our stability so we have to work hard to overcome them so that ultimately we can be free.  I also like to think of it as if I am stable in keeping within my daily allotted Weight Watchers points, I am free to eat cookies!!  Ha, ok maybe that’s a little reaching, but hey it seemed to work this week 😉



There aren’t enough hours in the day!

Anyone else feeling totally overwhelmed?  I know us FLF girls are.  I’m personally giving up precious minutes of sleep to do this post because I felt it was a little ridiculous that it’s been almost a month since I’ve posted.  So with a pile of unfolded laundry pushed over onto my husband’s side of the bed (who is not here), I will try to make this short and quick so I can try and get some sleep before my baby, who refuses to be sleep trained, wakes me up to feed him!

So where have I been the last month (23 days to be exact)? Uh, nowhere.  But, I did have my brother, his wife, and their 2 daughters staying with us for 2 1/2 weeks, so I blame them for me being too distracted to post.  It was so fun having them here.  Here are some highlights from their trip:

My niece was baptized in my sister Michelle’s pool.

It was such a cool and intimate family experience to have that I hope to also be able to do for my boys!

There was lots of eating out, so my brother could get all his Utah food fixes.

Went on a few hikes to burn off all the food we were eating.

Cole graduated from Preschool.

I finished my first phase of P90X2 and made my niece join in for one of my workouts.

Then almost killed her by making her a post-workout protein shake with SOY protein that she is apparently allergic to, no bueno!

They left to go back home on Father’s Day, boo, we’ll miss you!  Missed Daddy on Father’s Day, but got to spend the day with Papa.

Monday my Mom, Cole, Cruz, and I left for a trip to Disneyland.  We stopped in Vegas on the way down and stayed at The Trump Hotel again.  Cole had a blast in the bath tub!  I also started my 90-day challenge with the Body by Vi shakes with Lexy and Carman.  Since I was going out of town, I packed my shaker cup and shake powder and did the best I could.  My mom and I were really good with our food choices, as you’ll see in the pictures below, we really only had “junk food” once.  We packed healthy snacks like apples, bananas, carrots, celery, nuts, and Balance Bars.  When we ate out we choose chicken salads, Chipotle burrito bowls, veggies and hummus, egg white omelets, etc.  I brought my yoga mat, but was only able to do it Monday night after we got to the hotel.  The other days were too jam packed, but I’m pretty sure I burned a few calories walking all over Disneyland for 2 days!

We drove to Anaheim on Tuesday and checked into the Disneyland Hotel.  We gave Cole the choice of either going to the pool or going to the park and he chose the pool (he didn’t realize until the next day the choice he really made!).

We woke up early Wednesday to try to get into the park early to ride the Radiator Springs Racers ride in the new Cars Land.  We didn’t make it early enough and ended up going in with everyone else.  It didn’t matter though because Mommy was smart enough to go into the single rider line which was half the wait time as the regular line and we still ended up being able to ride together.  We met up with my friend Sarah and her cute boy Calum.  Sarah’s husband Cameron works as a manager in Flo’s V8 Cafe in Cars Land, so they know Disneyland in and out.  It was awesome to have her as our tour guide because we ended up going on tons of rides I wouldn’t have even thought to go on.  Plus she took us to the best places to eat so it was seriously like the best day.  We ended up staying out late to see the World of Color Water Show and just when I thought Cole was going to totally lose it with exhaustion he surprised me with a second wind and we didn’t get back to the hotel until 11pm.

Thursday morning I woke up early (with Cruz) and was waiting like a little kid for Cole to get up so we could go back to the park.  We rode a few more rides and then drove out to my Uncle Tom’s to get our teeth cleaned.  We stayed the night in Vegas again.

Drove home Friday, so glad to be home.  Talk about a long freaking week.  But oh was it soooo much fun and I’m so glad we were able to do it.  Headed straight for my Magic Bullet for a Green Vi Smoothie!

In case you were wondering, this is pretty much where Cruz was the entire trip…

I weighed myself on Saturday obviously because I couldn’t on my usual Friday.  I lost another 1.6 pounds for a total weight loss of 35 pounds in the last 3 months.  I’m super happy with my progress and I’m going to keep on keeping on!!

This weekend was chill and my menu’s consisted of Vi shakes, Balance Bars, Trader Joe’s nuts and cranberries mix, a chicken gyro in a Flatout bread, some WW oatmeal cookies, and delicious mahi mahi with mango salsa (I’ll post the recipe tomorrow).  I also got to go to hot yoga on Saturday and wore my heart rate monitor to see how many calories I burn.  It was over 700!!

It seems like the craziness never ends.  There is always something to be done.  I’m learning that I really have to prioritize what needs to be done and what can be put aside in order to not completely lose it.  I’m excited to keep on my 90 day challenge with the Body by Vi shakes and start Phase 2 of P90X2 tomorrow.  I will also be embarking on the adventure of finding a house in Austin and moving back within the next month.  Oh joy!  The fun never ends!


What do you want?

I want to eat my feelings!

I’ve been waiting for my husband to come home all week.  He was supposed to be able to come home yesterday night and then again tonight, but no such luck boo hoo.  Hence my title…I want to eat my feelings.  The problem is nothing sounds good enough for me to eat!


Had a much better day Tuesday…

Breakfast: Protein Pancake and fruit- 6pts

Keller was really bummed when he found out he couldn’t come home so we decided to drive out to Draper to meet him for lunch.  It was nice to spend some time with him.

Lunch: Chipotle burrito bowl- chicken, brown rice, veggies, pico, lettuce, guac, about 8 chips, and 4 bites of a bunt cake- 12pts

Can I just say…I love Chipotle!  It is our “go to” place to eat out (cause we eat out a lot if you haven’t noticed).  It’s awesome to have a yummy place to eat that’s healthy and easy to calculate my WW points! Ok off my soap box.

Snack: 5 Red Vines- 4pts

Dinner: parmesan crusted halibut and roasted veggies- 6pts? guesstimate

Snack: apple and PB- 3pts (no pic)

Total daily points=31

Favorite thing about Tuesday, having lunch with all my boys!


Had a very productive morning.  Took Cole to school then came home and did a workout.  I started out with 10 minutes of inclines on the treadmill.  Then I did a TRX band upper body workout of recline rows, Y-raises, chest press, bicep curls, triceps extension- 10 reps, 4 sets.  Ended with another 15 minutes of inclines.  +5pts

Breakfast: Protein Pancake and Green Greek Smoothie- 7pts

I was able to go get a massage today, but I’m not sure I would really call it a massage.  It was like being worked on by Torry  (Lexy’s husband) and calling it a massage.  I went in because my back was killing me and spent the hour on my back while she worked on my Psoas (pronounced: so as).  Pretty much she pushed and prodded me, not relaxing at all, but I do have to say I did feel a little better.

Lunch: turkey and avocado on sourdough toast- 7pts

Snack: Mint Cookie Balance Bar- 5pts

Dinner: flank steak, strawberry spinach salad, snap peas- 3pts

Snack: Red Vines- 4pts (see pic above in case you forgot what red vines look like)

Total daily points=26

False labor contractions suck!


I hate springing forward!  Sleep is very important to me.  It didn’t help that I started having pretty regular and noticeable contractions before I even went to sleep that continued throughout the night.

Breakfast: protein waffle (Cole wanted Mickey Mouse waffles) and a green greek smoothie

Headed off to church.  My contractions started getting more noticeable to the point that I started timing them and realized they were about 2-3 minutes apart.  I wasn’t really sure what to do cause I was induced with Cole so I really didn’t know what all is supposed to happen when you go into labor.  So I started texting my friend Taryn who is finishing nursing school and currently do her OB rotation at the hospital.  In the end we determined since they weren’t getting more intense and I had no other signs, it was probably false labor.

Snack at church:

I wasn’t really starving like I usually am after church, I think I was more preoccupied with knowing whether or not I was in labor so I just grabbed some sourdough toast with peanut butter and jam.

I made my mom paint my toes in case I was in labor, cause hello it’s very important to have pretty toes while giving birth.  My sister and her family came up and brought us a delicious dinner of chicken, broccoli, rolls, and fruit.

Took a nice long bath…which ps in case anyone reading this is pregnant…really does help ease contractions.  Then had a small bowl of half the fat mint cookie ice cream.


Still having contractions so I called my doctor first thing this morning to see if I could get in to see her.  I had to miss my spin class, but I figured it was probably ok 😉  Of course everything was fine, I’m not in labor…as of now.

Breakfast: piece of sourdough bread w/pb and jam

Keller and I headed down to Salt Lake to get the rest of the stuff we needed for the baby.  I got a massage first, it was fabulous!  Spent the rest of the day going to a few different baby stores getting the carseat and a few other little things.  We stopped by Chipotle for lunch.

Lunch: brown rice, black beans, fajita veggies, chicken, pico, lettuce, side of guac and sour cream (didn’t end up using)

Snacked on some Starburst jelly beans while we were running around.  Picked up Cole and headed home.  Since we didn’t get to workout this morning we decided to go to the gym tonight.  They had a 6pm spin class and in case you wondered spin class does NOT ease contractions.  But it felt good anyway.

Dinner: wasn’t feeling like dinner food so I had BFD…Protein Pancake and Green Greek Smoothie

And now I need a snack!
