Can I just sleep for the next 6 weeks?

I’ve been soooo tired lately.  By the end of the day I don’t want to do anything but lay on the couch and watch TV or go to bed.  So sorry I’ve been a slacker!


Breakfast: protein pancake and fruit

Mom took Cole to the rec center to play and I was able to catch up on my blogging and do some yoga.  30 minutes of the Rodney Yee Power Yoga for Flexibility.  This is my favorite yoga DVD, click here to check it out.  Unlike the prenatal yoga DVD, I actually DO feel rejuvenated after doing this DVD.  I met up with mom and Cole at Kneader’s for lunch.

Lunch:  turkey and avocado panini (wheat bread, turkey, provolone cheese, avocado, spinach, tomato, onion)  This was the most delicious sandwich ever!!  I ate half along with a few chips and a couple bites of a delicious double fudge brownie.

Took Cole to swimming and then to Taekwondo.

Snack: apple

Pre-workout: the usual

Hardcore spin teacher more than made up for my crappy Monday class.

Post-workout: protein pancake and green greek smoothie

Did some cleaning and worked with my CPA (my dad) on our taxes.  Then headed to the hospital for my volunteer shift.

Lunch: leftover Kneader’s sandwich

I picked Cole up from school and we headed down to my sister’s house for a cousin sleepover.  He was so excited!   I hung out at my sister’s until Keller’s flight got in.  She made a really yummy pasta with squash, zucchini, spinach and artichoke dip, and feta cheese.

I got to the airport just as Keller landed (PS I don’t think I mentioned that he went to Austin for a quick job that came up last minute).  It worked out great cause he was able to go to our storage unit and get some baby stuff that I didn’t think to bring when we first moved out here.  Essentials like the car seat and bottles.  So he had to check the car seat which was perfectly fine when he left Austin and snapped in half by the time it got to Salt Lake.  An hour later we had no car seat and a $100 voucher for Southwest airlines.  I guess you sign a waiver when you check something like a carseat that says they are not responsible for any damages so technically they don’t have to do anything which I think is total crap but whatever.  Luckily the lady helping Keller was nice enough to offer the voucher which was more than the money they would have given us for the 5 year old carseat.  SO I guess I should be grateful.


We got to sleep in cause the man child was at his sleepover.

We came home and got ready to go pick up the boys.  Took all 3 of them (Cole, J, and Will) out to lunch to Corner Bakery.  It was hilarious cause all 3 of them wanted soup, chips, and pickles…random much?

Lunch: 1/2 veggie panini, a few chips, and bites of a cinnamon roll we all shared

Our plan was to take the boys sledding but the snow has been so sparse we had trouble finding a hill that had a good amount of snow.  We finally did find one but the bottom of the hill was pretty close to a road, so Uncle Keller had to stand at the bottom and keep them from sledding onto it.

The boys were so tired after sledding we decided to skip taekwondo.  We headed home and had dinner.

Dinner: Michelle’s recipe Costco meatballs with Trader Joe’s spaghetti sauce, salad, and some garlic toast

Headed to Idaho tomorrow for the weekend to see our (FLF girls) sister-in-law Shea(Keller’s sister).  I’ll do my best to try and post while I’m there, but no promises. 😉


Chicken lettuce cups

Tuesdays with Heidi – Chicken Lettuce Cups

Today’s Tuesdays with Heidi features a delicious, quick, and healthy dinner similar to a Asian restaurant favorite.

Chicken Lettuce Cups…ingredients:

1 lb ground chicken

2 cloves of garlic

2 TBS chicken or vegetable stock

3-4 TBS soy sauce

1 teaspoon honey

1 1/2 TBS rice vinegar

2-3 drops of sesame oil

1/3 C scallions

1/4 C chopped cilantro

1 big yellow pepper

1/4 tsp red pepper flakes (option)- the picture above shows chili powder, disregard that, it’s supposed to be red pepper flakes

Head of iceberg, or other green lettuce suitable to be used for cups

Saute minced garlic in chicken or vegetable stock over medium heat for a minute or so, be careful not to burn the garlic.  Add ground chicken and cook.  In a bowl, whisk together soy sauce, honey, and rice vinegar, set aside.

Chop up scallions, peppers, and cilantro.  When chicken turns from pink to white, add sauce mixture and scallions and peppers.  Mix together until meat is fully cooked.

Remove from heat and stir in cilantro, sesame oil, and red pepper flakes.  Serve in lettuce cups or with rice.

We actually almost doubled the recipe cause we had 2 lbs of meat.  So based off the fact that there are 16 ounces in a pound and 4 ounces in 1/2C…there are about 4, 1/2 cup servings in the recipe.  And if followed correctly will give you 4 points per 1/2 cup.  However, if you do what I did and mistake the sesame oil for rice vinegar then you’re looking at 5 points per 1/2 cup.  Enjoy!


133 Burpees on carpet, gives you rug burn!

Yay for Tuesday…Got up bright and early today cause I had to get started on making homemade rolls for Cole’s school Thanksgiving feast.

I made the mistake again of missing my burpees…since last Thursday!  AHHH…133 make-up burpees.  So while the rolls were rising I figured I should get on the burpees so I didn’t have 155 tomorrow.

Pre-burpee workout:  1 TBSP PB and banana 3pts

Took me about 30 min cause they are seriously exhausting and I wanted to give myself enough of a rest so that my form didn’t suffer.  These were my hands after.

I used my mom’s chinese checker board to keep count.  I did them in 10’s, took a break, 10 more, break, etc.

Post-burpee breakfast: 5pts

Cole and I headed over to his school for the feast.  The kids all had a great time and got to try lots of different things.

I forgot to take a pic of the finished rolls and by the time I had the chance to take a pic, they were almost gone!

Snack: snacked on the mac&cheese (I wish I hadn’t tried it…it was soooo good and sooo not good for you!), 1/2 a roll, and those small pieces of ham  6pts

We came home and did some shoveling.  I put Cole to work!

We grabbed a snack of grapes, cheese, and a WW oatmeal cookie 5pts and then took a nap!

Tuesday is Taekwondo day and I went over to Heidi’s for Tuesdays with Heidi…I’ll make a separate post with our recipe of the night and instructions.

Tuesdays with Heidi

So I’m starting a new feature with my friend Heidi.  We have been friends since college and she introduced Cole to the Taekwondo studio that her son goes to.  So every Tuesday we get to hang out for an hour and a half while the boys are at class and we’ve decided to make the best of that time by cooking a healthy quick meal.

In the morning I was able to get a great workout in.  Tuesdays’ prego workout: 15 minutes of yoga, 20 minutes of treadmill intervals, alternating lunges w/hammer curls, squats holding a 15lb DB, curls w/the 15lb DB, curtsy lunges w/lateral raises, skull crushers, static lunges with overhead presses.  My legs were killing last week after this workout and so I figured that meant that it must have been good!

Had my usual for breakfast…protein pancake w/fruit  5pts.  And Cole wanted soup for lunch so we had more of the Trader Joe’s butternut squash soup w/cheese toast (basically Great Harvest bread w/melted muenster cheese) and grapes  8pts.  Snack was a balance bar  5pts.

I dropped Cole off at my sister’s house and went to Costco.  They were sampling these delicious flatbread crackers called Lavash.  They are seasoned with rosemary and unbelievably delicious.  Unfortunately, they are not as point friendly as I thought they’d be.  But still delicious, 5 crackers are 4pts.  I picked up some hummus and this was our appetizer while we cooked.  My serving=3pts.

I’ve been craving some of Carman’s salsa…and since we were making chicken verde I thought it would be perfect timing.  Sorry, can’t give you the recipe…it’s not mine to give ;).  Serving of chips=4pts.

Chicken verde:  4-6 chicken breasts (depending on the size), 1 bottle of salsa verde we used Herdez brand, garlic (about 3-4 cloves)…throw it all in your crockpot and cook 4 hours if chicken isn’t frozen 6-8 if it is.  When chicken is cooked take out of pot, shred, then put back in the crockpot for another 30 minutes.

1/2C of chicken is about 3pts.

Serve with white corn tortillas and whatever you want to top it with cheese, avocado, salsa, lettuce, sour cream, the possibilities are endless.

2 chicken verde tacos w/sprinkle of cheese and salsa  8pts.

I had also been craving oatmeal cookies and so instead of going to Great Harvest and getting one of theirs, which I found out is 12pts…I decided to make the delicious WW oatmeal cookies.  Now Heidi knows me from my days of my famous chocolate chip cookies.  They are about 6 or 7 points each, but they are delicious!  So Heidi was very skeptical that cookies associated with the word Weight Watchers would compare.  She was pleasantly surprised!!

And her 2nd child Ezra LOVED them too!

I told her I couldn’t do a feature on my blog called Tuesdays with Heidi and not have a picture of Heidi.  She’s anti pictures and used her 9-m-o baby Remi to hide her from my evil camera phone.

The best part of Tuesdays with Heidi is that we have our own cleaning crew!
