There’s a BLONDE in the kitchen!!!

TODAY marks the one year anniversary of my most recent weight loss journey with Weight Watchers. It’s also the anniversary of me committing to use the dietSNAPS iPhone app! I posted over on the dietSNAPS website if you wanna check it out HERE!

I stayed home from church because both of my boys are feeling under the weather… lots of Kleenex being passed around our house!

My dear, sweet, and loving sister in law…. Carman…. kindly gave us some candy from the CANDY PALOOZA party on Saturday….

THIS HAPPENED more than twice today.



ALSO….  I made a Lasagna Casserole for the first time…

My grandma (Meemaw is what we called her) was from Italy! She used to make a really good lasagna…. and I know this is nowhere CLOSE…. but I did think about her and wondered if she would have been laughing at me as I tried to assemble the dinner!

I have a subscription to E-Meals (I use the portion control plan because they have the WW points already calculated for you) This recipe is from them…

Like you probably already figured out… I’m not the best cook in the world… so I measure things when the recipe calls for 8 oz…. you know how many times I had to break those noodles to get down to 8 oz?!?!?!?! 😉

Browned 1 lb of lean beef…

Combined 1 cup of cottage cheese and 8 oz of light cream cheese….

Cooked the noodles and began the layering process…

Noodles, meat, cheese, sauce, repeat…

Blonde mistake…. I ended with noodles on top….

The top noodles got crispy… so I just dumped those and went with the rest of the casserole. :)

The boys loved their dinner and I was happy to try something new! :)

Time to crank things up again in the morning!!! I think I celebrated my one year WW and dietSNAPS anniversary a little too much!
