So we actually did Tuesdays with Heidi on Tuesday, but I’ve been tired! On Tuesday we made Chicken Gyros…super easy and you only need 5 ingredients.
4-5 chicken breasts
1 red or yellow onion
2 red peppers
tzatziki sauce (we used Costco brand)
pitas (Costco brand)
cucumbers and tomatoes
Cut chicken breasts into bite size cubes. (Heidi thought this was a gross pic)
Cut peppers and onion into bite size pieces. Spray pan with Pam or drizzle EVOO and then wipe with a paper towel. (I didn’t do this, but if you have a clove of garlic…chop or press it and put in pan…cook for about 30 sec) add onions and peppers and sauté for about 3-5 min until just done.
Remove peppers and onion from pan and set aside. Spray a little more Pam and sprinkle pan with garlic salt. Add chicken and sauté until cooked through. Stir peppers and onions into chicken and remove from heat. Assemble your pitas with about 2 TBSP’s of tzatziki sauce spread onto the pita. Add 1/2-3/4 cups of chicken and peppers. Add more sauce if needed and top with cucumbers, tomatoes, and feta, if desired. And enjoy!
