Since I missed my Tuesdays with Heidi this week…let’s make this Wednesdays with mom!
Tzatziki Chicken over Orzo
(4) 4 oz chicken breasts
2 zucchini’s cut into 1/2 inch pieces
1 yellow squash cut into 1/2 inch pieces
1/2-1 cup mushrooms
2 green onions
1 cup Tzatziki sauce
1 cup Non-fat greek yogurt
2-3 sprigs of parsley
Sprinkle of parmesan cheese for garnish
1 cup Orzo pasta
about 3 cups chicken broth
Boil 2 1/2 cups chicken broth and add orzo. Cook according to package (about 10 min.)
Cut chicken breasts in half, spray frying pan with Pam and sprinkle with garlic salt.
Cook over medium heat until chicken is cooks through about 3-5min per side.
Remove chicken and add a little of the rest of the chicken broth. Chop green onions and parsley.
Sauté the green onions for a couple minutes and add mushrooms, zucchini, and squash until just cooked. You can keep adding chicken broth so the veggies don’t burn.
Add the Tatziki sauce and yogurt, stir.
Add in chicken, stir, cover, and turn heat to medium to bring to a simmer.
Simmer for about 5 minutes. Serve over 1/4-1/2 cup of orzo. Garnish with parsley and parmesan cheese and enjoy!!
This was so delicious, a great substitute for creamy alternatives like fettucini alfredo. It tastes rich creamy and satisfied my hunger for some comfort food!
1 chicken = 3 points (my plate was 1/4C orzo and 1 chicken with a couple spoon fills of sauce- 4 points)
