Will They Like It? Crockpot Lasagna

 

I feel like I kinda cheated on this weeks experimental dinner…. Crockpot Lasagna was mentioned in a recent Weight Watchers meeting and it sounded easy enough. I searched on the WW site for the recipe. There were many to choose from so I jotted down the ingredients I would need. After going to the store, and several days later…. I couldn’t find the recipe. So…. I did the best I could….

Ingredients:

1 lb ground beef (80/20)

1 onion

2 cans diced tomatoes (15 oz)

italian seasonings to taste

7 oz fat free grated mozzarella cheese

7 oz ricotta cheese

2 T grated parmesan cheese

2 T parsley

1 egg

6 lasagna noodles

Directions:

Started out by sautéing the diced up onion… and browning the meat… then I added the 2 cans of tomatoes and italian seasonings. (REALLY wish I would have added garlic….. what was I thinking??) I let this simmer while I mixed up the cheeses….

Mixed up all of the cheeses, the parsley and the egg until creamy….

 

Then I added a cup of the meat sauce to the bottom, followed by broken noodle pieces, followed by the cheeses. I repeated this until I ran out of supplies… 😉 Then I turned my crockpot on High for about 4 to 5 hours.

This picture cracks me up…. Like, oh great… Mom cooked again…. wonder what it will taste like this time??

Lucky for me  I got the thumbs up!!! They liked it!! (I thought it needed garlic, but was still good)

(Kody wanted me to tell you that he knows better than to wear a hat at the dinner table…. but I made them because they both need hair cuts)

    I just love those boys!!! Kody and his good manners!! He opens the doors for me. Sweethearts!! Oh yea, the lasagna looks good too!
